SCIENTIFIC OBJECTIVES

  • Multidisciplinary group with extensive experience in technology, quality, food safety and sensory characteristics in processed plant products.
  • Exploration of alternative protein sources based on plants and microbial sources for the design of new products.
  • Use of plant by-products for extraction of valuable food ingredients through membrane filtration technology.
  • Development of new plant products, through minimal processing, ready-to-eat dishes, texturization, 3D printing, fortification, and other innovative processing and drying techniques on a pilot scale.
