  • Design of new functional foods using environmentally sustainable technologies from emerging or alternative crops and valorizable by-products with a beneficial effect on human health beyond adequate nutrition.
  • Bioactive properties of extracts from edible mushrooms (and truffles).
  • Other extracts from spices, microalgae, insects, emerging foods and bio-waste.
